Pan co’ Santi (or Pan dei Santi), like all the other pastries of Siena, dates back to the Middle Age. It was the typical bread baked in early November for All Saints’ Day and Day of the Dead. It was an ancient bread made with lard, nuts, raisins and spices carried by merchants from their journeys. It was not a simple bread, but rather a whole meal, given its composition.

Its name is inspired by the ingredients, nuts and raisins are – indeed - called “saints” and they are responsible of its sweetness because there is not much sugar in it. At the moment, it is produced from September to December and reaches the peak of production around All Saints’ Day. Savoring it with a glass of Vinsanto is the epitome of flavor.
